The Rocket Flower washed process begins with a 36-hour pre-fermentation, followed by floating and disinfection using sea salt. It then undergoes anaerobic fermentation, and is pulped. Leachates are collected and used per fermentation tank with enzymes to create a floral profile, then fermented for 6 days. The beans are mechanically dried for 2-3 days at below 38 degrees. A 15-day stabilization period follows. This results in a flavor profile of lemongrass, citric acid, citrus, cocoa, coffee blossom, floral, orange, and sweet aromatics.
